Seekh Kebab Masala
Mix all the Kebab ingredients together, and shape for seekh (sausage shape). Shallow fry in oil.
Fry the onions in ¾ cup of oil, until lightly brown.
Add the ginger-garlic mixture paste and cook.
Add the blended tomatoes, cook for a while, and follow up with all the remaining ingredients.
Add a little water, and cook until all the masala is nicely mixed together.
When the oil starts to separate out, reduce flame strength, and add the fried Seekh Kebabs.
Garnish with coriander leaves, green chillies, and ½ tsp each of cumin powder and garam masala.
Put a foil paper on top of the seekh kebabs and place hot coal on the foil. Drop 2-3 drops of oil onto the hot coal, and give dum in an airtight pan for 15 minutes.
